This is a perfect weeknight meal when you desperately want lasagna but have neither the time nor the energy to do it. You will love the how the top of this Baked Ravioli comes out like a luscious, melty and burnished pizza with thick, soft ravioli pillows hiding underneath.
If you can find fresh ravioli, use that! The texture is velvety after baking. Otherwise, thawed, frozen ravioli will work.
Notes: Fresh ravioli is from Trader Joe's.
BAKED RAVIOLI
Ingredients: 16 oz. fresh ravioli (cheese or meat-filled), 1 jar marinara sauce, 1/2 cup cream cheese-cubed, 1/2 tsp. dried oregano, 1 cup shredded mozzarella cheese, 1/4 cup crumbled Feta cheese, fresh chopped basil.
Serves 4.
1. Preheat oven to 400*, spritz an 8x8 or 9 inch round baking dish with cooking spray.
2. Cook ravioli in boiling water for 3 minutes or until it floats, drain.
3. Meanwhile, heat marinara sauce in a large pot over medium heat with the cream cheese cubes. Place a lid on top, slightly ajar. As cream cheese melts, whisk it into the sauce to combine.
4. Add the ravioli into the sauce. Spoon into baking dish then sprinkle over dried oregano. Follow with mozzarella and feta cheese. Bake for 25 minutes or until cheese is melted and bubbling. Sprinkle over fresh basil before serving.
