This was fun to make and oh so yummy. Typically tortillas get rolled in our house, but I love the way they get crisp in their Thin-ness when they are given "pizza treatment". Add your favorite omelet ingredients and you are off to the races with a simple and tasty breakfast.

Notes: Egg white is Egg beaters.
BREAKFAST QUESADILLA PIZZA
Ingredients: 1 8-10 inch flour tortilla, 3/4 cup prepared egg whites, 1 Tbsp. olive oil, 1/2 tsp. chili-lime seasoning, 1/4 cup chopped peppers, 1/4 cup chopped onions, 1/2 cup chopped leftover ham or chicken (optional), 1 cup cheddar-jack shredded cheese blend, chili flakes.
1. Heat olive oil in a pan over medium-high heat, and cook the peppers, onions, and meat, if using.
2. Pour in the egg whites. Season with chili lime. Cook until egg white is firm, and a spatula can be slipped underneath without tearing it. Set aside.
3. Heat the tortilla on medium heat in a non-stick pan or on a griddle. Sprinkle over about ¼ cup of the cheese and allow to melt. Lay the egg white on top of the tortilla.
4. Top the egg white with the rest of the cheese. Cook until the tortilla bottom is crisp and golden. Slice into wedges, scatter over some chili flakes.
Tip: You can absolutely use regular eggs for this, in place of store-bought egg whites. Crack 4 eggs and beat with 1 Tbsp. of milk.
