CHUNKY GREEK SALAD
You could probably eat this with almost any meal, for it's freshness and happy colors. IT's cooling, vibrant, clean and works well with any meat, from grilled chicken or lemony Salmon to garlicky steak or skewered shrimp.

"If you are not a fan of Feta, use cubed mozzarella, it won't have the tart punch, but it will still be great."
Notes: Cucumber is an English cucumber.
CHUNKY GREEK SALAD
Ingredients: 1 cucumber, 1 container grape tomatoes, 1 package un-crumbled Feta cheese, olive oil, 1 tsp. dried dill, 1 tsp. dried parsley, 1/2 tsp. salt, cracked pepper.
1. Chop cucumber into 1-inch quarters and slice tomatoes vertically in half, place in bowl.
3. Cut Feta into small chunks, add to bowl.
4. Drizzle over olive oil, about 1-2 Tbsp. Add dill and parsley and salt. Do as much cracked pepper as you can stand. Toss and serve.
Tip: This is best served immediately, or chilled for less than an hour before serving. Cucumber will leach their water and make this salad soupy if it sits too long.
