I am going to list all the ways this is a perfect summer go-to meal. It is ultra fast. It is savory, salty and sweet (happy mouth). It is a healthier, lighter version of pizza. You can make it using leftovers.
The only thing you need to remember is that you should make two. For you. One is not enough! (And if you choose to make this little number at midnight after some drinks, I will fist-bump you in spirit.)
"I cold, cold lager is so good with this."
Notes: Flatbread is frozen garlic naan from Trader Joe's.
Ingredients: 1 piece frozen naan, 1/2 tsp. olive oil, 1/2 cup chopped fresh pineapple, 1/4 cup crumbled bacon, 1 Tbsp. red onion shards, 1 Tbsp. torn fresh cilantro, 1/4 cup + 1 Tbsp. shredded Parmesan cheese, chili flakes (opt.)
Make1 or more...
1. Preheat the oven to 400*.
2. Brush the frozen flatbread with olive oil. Sprinkle over 1/4 cup parm. Follow with pineapple, onion, and bacon.
3.Cook directly on the rack in the oven for 5 minutes, or longer for a crisp crust.
4. Finish and flourish with the cilantro, chili flakes, and shredded parm.
Tip: Do not thaw the flatbread! It cooks perfectly from frozen. I told you it was easy.
