This is your sign to make 2020's viral holiday recipe. It takes a dash of whiskey better, tastes deeper, and has uniqueness in spades over hot chocolate. It's also fast to make and an excellent side step from the usual mug of cocoa—amber-hued, creamy...warming--genuinely delectable.
"A mini cloud of fresh whipped cream and flick-over of nutmeg finishes it perfectly."
Notes: Milk is unsweetened vanilla almond milk.
HOT BUTTERSCOTCH
Ingredients: 3 cups milk of choice, 1 cup butterscotch chips, 1 tsp. vanilla extract, pinch of salt, whipped cream (optional), 1/4 tsp. ground nutmeg (optional).
Makes two 12 oz. servings.
1. Heat milk, salt, and vanilla in a saucepan over medium heat until bubbles form around the edges and steam rises. Add butterscotch chips, and turn the heat to very low.
2. Whisk chips into the milk until completely melted and combined. Continue stirring, bringing the heat back to medium-low, about 2 minutes. Stir and heat until the desired temp- but be careful! Do not scald.
3. Pour into mugs. Add whipped cream and ground nutmeg on top—Spike with a dash of rum or whiskey for an adult version.
TIP
To make fast whipped cream, do it the old-fashioned way. Add heavy cream to a small bowl with a teaspoon (or two) of powdered sugar, and whisk like mad.
