Frozen watermelon and banana get blitzed with ripe chunks of peach and a whopping dollop of live-cultured vanilla yogurt. Don't eat before you've topped your bowl with more peach, granola, and slivers of almond. So good, so good for you, whether it's breakfast on a hot day or dessert after a grill-out.
Notes: Yogurt is Trader Joe's. Granola is peanut butter-flavored.
PEACHY PINK FROZEN BOWL
Ingredients: 1 peeled and chopped peach, 1/2 frozen banana, 1/2 cup frozen watermelon, 1/4 cup live-cultured vanilla yogurt, 1 tbsp. granola, 1 tsp. slivered almonds
Serves 1.
1. Prep and process: Put a bowl in the freezer. Process (or blend) the watermelon, most of the chopped peach, the banana, and the yogurt until smooth or to your desired consistency.
3. Serve: Spoon the mixture into the cold bowl and top it with the extra peach, granola, and almonds.
TIP
Anytime you have leftover fruit or fruit nearly at its limit, chop it up, toss it in a zip-lock bag, and freeze it.
