SHEET PAN LEMON & GARLIC BUTTER TILAPIA
So, I got you a winner here. This entree will be at your table in less than 20 minutes--and closer to the fifteen. The fish does a quick roast in a coating of buttery, lemon, and garlicky goodness with a kiss of heat from cayenne pepper and comes out nearly melting. It won't stay together, and that's a good thing. Add rice, add noods, add veg--pick your side-adventure and grab some tear-and-share bread; you won't want to waste the buttery juices for sopping up.

Notes: Butter is unsalted.
Sheet Pan Lemon & Garlic Butter Tilapia
Ingredients: 6 tilapia filets, 2 lemons, 4 tbsp. butter, 2 tsp. minced garlic, zest of 1/2 lemon, 3 tbsp. lemon juice, 1/4 tsp. cayenne pepper, 2 tbsp. chopped parsley, sea salt, pepper, and sliced lemon.
Serves 4-6.
1. Prep tilapia and garlic butter: Preheat the oven to 400* F and line a sheet pan with foil. Pat dry the tilapia, then lay it on the sheet pan. Salt and pepper both sides to taste. Melt the butter on medium in the microwave with the garlic and lemon zest. Stir in lemon juice and cayenne pepper. Pour the butter over the tilapia filets. Lay slices of lemon over the fish if you like.
2. Roast: Roast the fish at 400* for 10-12 minutes. Remove and immediately tent with foil to hold in the heat. Sprinkle with chopped parsley before serving.
