BASIL SKINNY MARGARITA

This margarita recipe makes twenty...or so versions of my favorite cocktail, and no, I haven't posted them all (I have to keep some secrets to myself). This sucker is a little too good not to share, though; it's fresh and herbal and sour and low-sugar (skinny), just perfect for spring.


*Love it spicy by not too spicy? Add cayenne pepper to the pink salt rim.



Notes: Tequila is 100% blue agave. Limeade is Trader Joe's.


BASIL SKINNY MARGARITA

Ingredients: 2 ounces tequila, 3 ounces limeade, juice of 1/2 lime, 4-6 basil leaves, ice, 1/2 tsp. agave nectar., 2 tsp. pink salt, cayenne pepper (optional).


Makes 1.


1. Rim the glass: Sprinkle the salt onto a small plate. Add cayenne pepper if you want it a little spicy. Mix. Take a piece of cut lime and wipe it around the edge of the glass. Dip the glass into the salt mix. Fill the glass with ice.


2. Make it and shake it: In a cocktail shaker, add 1/2 cup of ice, the basil leaves, and tequila. Shake thoroughly for 1 minute to bruise the basil and release its oils into the tequila. Add the limeade, lime juice, and agave nectar and shake again—strain into the glass. Add additional basil leaves and a lime wedge for garnish.


TIPS


Make it skinnier: Skip the agave and let the limeade be the touch of sweetness.


Make it the skinniest (you rebel): Reduce the amount of limeade to 1 ounce and increase the lime juice to 2 full limes, squeezed, for a total of roughly 3 ounces between the two. Do not add agave. It will be puckeringly sour!
