PINK SOUP

When the temperature starts to soar and the sun is piercing, I want to eat something cold, refreshing and light. This soup is perfect. I love how the ingredients turn a pale pink and become slightly frothy with the tiniest hint of fizz. That comes from the Kefir.


Kefir is an active probiotic yogurt drink that, due to its beneficial live cultures, tastes clean yet tart with micro bubbles. I love it on its own, but when blended with strawberries, bananas and ice, it becomes a lusciously light and creamy soup. Don't be tempted to drink unless you are very short on time. The spoon-to-mouth experience here is quite nice.



"Kefir can be found at most grocery stores, but if you are having trouble you can substitute 3/4 cup of vanilla Greek yogurt + 1/4 cup kombucha."

PINK SOUP

Ingredients: 1 cup vanilla Kefir, 1 cup ice, 1/2 banana + 1/2 banana sliced thinly, 1/2 cup strawberries-hulled + 1/2 cup sliced thinly, 1 Tbsp. crushed freeze dried strawberries (opt.)

Serves 2


1. Add the Kefir, ice, 1/2 banana and 1/2 cup hulled strawberries into a blender. Blitz until smooth and frothy.

2. Ladle into bowls. Split the sliced bananas and strawberries between the bowls. Shower over the freeze dried berries.
