This salad is everything a light, summery salad should be. And very simple. (though not boring!) You know, something you are actually willing to eat while lounging next to the pool. It's clean and crisp and super refreshing with a lemony zing from a lighter-than-air Caesar-ish vinaigrette. ('Ish' because i left out the anchovies, but you can add them in if you want!) The raw quinoa provides pleasant tiny pops of texture between your teeth and a subtle nuttiness. Low-calorie, low-fat, and (yes!) satisfying. Love this salad.

Notes: Olive oil is Extra-Virgin.
POOLSIDE SALAD (CAESAR SALAD + RAW QUINOA)
Ingredients: 5-6 inner romaine leaves, 2 tsp. raw quinoa, 2 tsp. grated Pecorino Romano or Parm. cheese, Caesar-ish Vinaigrette
1. Wash and dry the inner leaves of the romaine well. These are the tighter, smaller leaves that are near the core. Lay on a platter.
2. Make the vinaigrette below, and drizzle over.
3. Sprinkle over the quinoa, followed by the cheese.
Whisk together the juice of 1/2 lemon, 1/2 tsp. Worcestershire sauce, 1 egg yolk, 2 tbsp. olive oil, 1 minced garlic clove, and a pinch of black pepper.
Alternative method: Whisk together 2 Tbsp. purchased quality Caesar dressing with juice of 1/2 lemon.
