BLUEBERRY RICOTTA TOAST WITH CINNAMON-CRISPED SALAMI, HONEY, & MINT
Ingredients: 1-2 slices sourdough bread, 1/2 cup blueberries, 1/3 cup ricotta cheese, a pinch of sea salt, 1-2 ounces hard salami, 1/2 tsp. cinnamon, honey, fresh mint, and chili flakes (optional).
1. Toast the bread to your desired color, with or without a bit of butter.
2. Lightly mash the blueberries in a bowl before combining them with the ricotta and salt.
3. Cut the salami by rolling each piece into a tube and slicing it crosswise to make little ribbons. Fry in a dry pan over medium-high heat with the cinnamon until crisp. Drain on a paper towel.
1. Spread the blueberry ricotta over the toast. Add the salami over the top, followed by a drizzle of honey, fresh mint, and chili flakes, if you like. Serve immediately.
