LEMON MINT 'MOCKARITA'
Not every marg has to have alcohol. And that is coming from a margarita freak--ahem, me. This one is refreshingly sour with a sweet edge, plus a fresh kiss of mint that plays on your tongue and bubbles for quirk on the top. It's fun and 'skinny' and yummy, with tapas or before a heavy Mexi-meal. (And ideal for those who want a fun drink sans the booze or for those who are too young to partake.) Enjoy!

LEMON MINT 'MOCKARITA'
Ingredients: Juice of 1 1/2 lemons (1/3 cup), juice of 1 lime (2 tbsp.), juice of 1/2 orange (1/4 cup), 1-2 tsp. agave nectar, 2-3 ounces of lemon soda water, 1 lemon wedge, and 1 lime wedge for garnish. For the lemon-mint rim: 1 tbsp. sugar, 2 tsp. lemon zest, 2 tsp. chopped mint, 1 tsp. sea salt.
Makes 1 mockarita.
1. Rim the glass: mix the sugar, coarse salt, lemon zest, and chopped mint on a plate. Run a cut piece of lemon around the rim, then dip it into the sugar mix. Fill the glass with ice.
2. To a cocktail shaker, add ice, lemon juice, lime juice, orange juice, and agave. Shake vigorously.
3. Pour the mixture over the ice in the glass. Top with lemon soda water. Garnish with a lemon and lime wedge and more mint if you like. Serve immediately.
