SUCH a great salad with pungent flavor; it's not heavy, has loads of chew factor, and many options to customize. This is the salad I return to after holiday heavy foods or anytime I want to feel completely satisfied and good because I just ate a salad and nothing more.

Notes:
MASSAGED GREENS SALAD
Ingredients: 4 cups shredded kale, 1 chopped avocado, 1/2 cup dried cranberries, 1/4 cup roasted sunflower seeds, 2 ounces crumbled blue cheese. Dressing: 2 tbsp. garlic-infused olive oil, 1 tbsp. champagne vinegar, 1/2 tsp. sea salt, 1/2 tsp. pepper.
Serves 2-4.
1. In the bottom of a large bowl, whisk together the oil, champagne vinegar, salt, and pepper until emulsified.
2. Tumble the kale on top of the dressing, then massage it into the kale, by rubbing it between your hands.
2. Add the cranberries, sunflower seeds, avocado, and blue cheese, to the kale, and toss gently. Serve immediately.
Variations:
(Use the same measurements and dressing)
Shredded romaine, chopped avocado, dried chopped apricots, pumpkin seeds, and crumbled goat cheese.
Shredded green lettuce, chopped avocado, raisins, hemp seeds, and sharp cheddar cheese.
Shredded chard or mustard greens, chopped avocado, dried cherries, sunflower seeds, and crumbled Feta.
