RUSTIC CRANBERRY SAUCE

RUSTIC CRANBERRY SAUCE

Ingredients: 1 12-ounce bag fresh cranberries, 1/3 cup water, 1 ounce bourbon or whiskey, juice of 2 medium oranges (1/2 cup), zest of 1 orange, (3/4 cup sugar + more if desired), pinch of sea salt.


Makes 2 cups.


1. Bring to boil: In a medium saucepan, bring the water, orange juice and sugar to boil. Add the cranberries, salt, and orange zest, then return to boil.


2. Reduce to simmer: Reduce the heat to medium to bring to a simmer for 10 minutes. Stir int the bourbon or whiskey*. (At this point, most of the cranberries should have burst, you can always mash with the back of a spoon for smoother texture.) Transfer into a serving bowl and cover. Refrigerate until serving. Will keep up to a week (or you may freeze wrapped well for up to two months.)


*A note on the bourbon or whiskey: if you are concerned about the alcohol not cooking out (though it should if exposed to simmer temperature for 2 minutes, you can add with the orange juice in step one.
