I adore this salad. Chickpeas are a staple in my house, but goat cheese isn't. The goat cheese balls idea was sheer spontaneity out of the necessity to use it. I had no idea that they would transform an ordinary chickpea salad into something completely fantastic.
"If arugula isn't your thing, baby kale or spinach would work well, but then add a small pinch of pepper."

SWEET-HOT CHICKPEA SALAD WITH HERBED GOAT CHEESE BALLS
Ingredients: 1 can drained and rinsed chickpeas, 1 1/2 tbsp. olive oil, 1 tsp. garlic salt, 1 tsp. chili flakes, 3 cups arugula, 8 oz. goat cheese, 2 tbsp. herbs de Provence, 1/2 tsp. sea salt, sweet chili sauce.
Serves 2
1. Preheat the oven to 400* and line a baking sheet with parchment paper.
2. Pat the chickpeas dry and tumble onto the baking sheet. Drizzle olive oil over, then follow with garlic salt and chili flakes. Turn to coat. Roast for 10 minutes.
3. Mix the herbs de Provence and sea salt together. Form 1-inch balls of goat cheese and roll the balls in the herbs.
4. Spoon the still-warm chickpeas over the arugula, then add the goat cheese balls. Use the sweet chili sauce as dressing.
Tip: Herbs de Provence is a spice blend that contains marjoram, fennel seed, tarragon, basil, thyme, and lavender. It can be found at most grocery stores including Target and Walmart.
