The next time you are overzealous and buy too many berries with visions of eating them for every meal only to see some turn sad and soft, make this jam. No refined sugar, no pectin, no thermometers—notta. It’s magic.
Notes: Honey or maple syrup may be used in place of agave nectar.
12 Minute Chia Berry Jam
Ingredients: 2 cups berries (strawberries, blueberries, blackberries, etc.), juice of 1/2 lemon, 2 tbsp. chia seeds, 1-2 tbsp. agave nectar (optional)
Makes 1 1/2 cups.
1. Cook berries: Bring the washed berries to a bubble over medium heat, stirring regularly. Cook until broken down and juicy, about 9 minutes. Remove from heat and mash, to desired consistency.
2. Finish and chill: Stir in the lemon juice, chia seeds, and agave, if using. Taste to adjust sweetness. Place into a clean jar/s or other air-tight container. Cool for a couple minutes, jam will thicken as it cools. Chill in the refrigerator for at least 1 hour before using. Keeps for 3 weeks.
