Imagine you are me this morning: You wake up earlier than usual, the energetic light of the day forcing your eyes open. You drag your feet to the kitchen thinking only of the coffee you have yet to make, your stomach rumbles. Cooking breakfast is daunting before your mugful, but still, your stomach is bossing. Open the fridge. You've forgotten! The Almond Cookie Overnight Oats are resting in a foggy glass. You smile, your stomach settles in anticipation.

ALMOND COOKIE OVERNIGHT OATS + STRAWBERRIES
Ingredients: 1/2 cup old-fashioned oats, 2/3 cup unsweetened vanilla almond milk, 1/4 tsp. cinnamon, 1/2 scoop vanilla protein powder, 1 Tbsp. almond butter. Topping: 1 Tbsp. plain or Greek yogurt, 3-4 chopped strawberries, 1 tsp. honey, more cinnamon
1. The night before: Stir oats, almond milk, cinnamon, almond butter, and protein powder together in a glass. Cover with plastic wrap and put to sleep in the fridge.
2. Next morning, remove oats, top with chopped strawberries, yogurt, honey and a sprinkle of cinnamon.
