DETOX GRAPE & SPINACH SALAD

With pistachios, almonds, cucumbers, and an uber-light sesame vinaigrette that lightly coats the spinach leaves. Subtle and clean. Each bite of bursty grape and juicy cucumber in combination with squeaky-fresh spinach plus nuts is delightful. Very low-calorie salad but super-pleasurable to eat!


"If you aren't feeling up to making the vinaigrette, sub-in your favorite Asian sesame-based vinaigrette dressing."

Notes: The oil is grape seed.


DETOX GRAPE & SPINACH SALAD

Ingredients: 4 cups baby spinach, 2 cups grapes, 1/3 English cucumber-sliced, 1/4 cup shaved almonds, 1/4 cup roasted pistachios, sesame seeds. Sesame Vinaigrette: 1 tbsp. neutral oil, 2 tsp. sesame oil, 3 tbsp. rice vinegar, 2 dashes soy sauce, 1 tsp. tahini, 1 tsp. honey, a pinch of salt, and pepper.

Serves 2 well.


1. Make Sesame Vinaigrette: Whisk all ingredients together or shake them up in a jar.


2. Massage 1/2 of the vinaigrette into the spinach leaves and set aside in a large bowl for five minutes.


3. Halve the grapes, then add them with the pistachios, almonds, and cucumbers to the bowl with the spinach. Toss. Sprinkle over sesame seeds. Serve salad with extra vinaigrette on the side if you like.
