Annnd pistachios, almonds, cucumbers and an uber-light sesame vinaigrette that barely coats the leaves of the spinach. Subtle, nutty, spicy and clean. Each bite of burst-y grape and juicy cucumber in combination with squeaky-fresh spinach plus nuts is delightful. Very low-calorie salad, super pleasurable to eat. You just feel like your bod got detox session with this one and it tasted soooo good!

Notes: Oil is grape seed.


Ingredients: 4 cups baby spinach, 2 cups grapes, 1/3 English cucumber-sliced, 1/4 cup shaved almonds, 1/4 cup roasted pistachios, sesame seeds. Sesame Vinaigrette: 1 tbsp. neutral oil, 2 tsp. sesame oil, 3 tbsp. rice vinegar, 2 dashes soy sauce, 1 tsp. tahini, 1 tsp. honey, pinch of salt and pepper.

Serves 2 well.

1. Make Sesame Vinaigrette: Whisk all ingredients together or shake up in a jar.

2. Massage 1/2 of the vinaigrette into the spinach leaves and set aside in a large bowl for five minutes.

3. Halve grapes then add to the bowl with pistachios, almonds and cucumbers. Toss. Sprinkle over sesame seeds.

4. Serve salad with extra vinaigrette on the side, if you like.
