Creamy, but light, and savory yet sweetly herbal— THIS dressing is downright drinkable. You’ll want it on everything. Bonus— the cottage cheese provides decent boost of protein.
Basil Goddess Dressing
Ingredients: 2 cups loosely packed basil leaves, 1/2 cup cottage cheese, 1/4 cup olive oil, scant 1/4 cup red wine vinegar, 1 tsp. minced garlic, 1/2 tsp. sea salt, 1/2 tsp. pepper, 2-3 tbsp cold water.
Makes about 1 1/2 cups.
Blend ingredients: place all ingredients into a blender or magic bullet. Blend until smooth, adding the water a little at a time until the dressing is smooth and moving. Store covered in the refrigerator up to a week.
I don’t buy cottage cheese but I have cream cheese, feta cheese and sour cream on hand. Will any of these work?
