Basil Goddess Dressing

Creamy, but light, and savory yet sweetly herbal— THIS dressing is downright drinkable. You’ll want it on everything. Bonus— the cottage cheese provides decent boost of protein.



Basil Goddess Dressing

Ingredients: 2 cups loosely packed basil leaves, 1/2 cup cottage cheese, 1/4 cup olive oil, scant 1/4 cup red wine vinegar, 1 tsp. minced garlic, 1/2 tsp. sea salt, 1/2 tsp. pepper, 2-3 tbsp cold water.


Makes about 1 1/2 cups.


  1. Blend ingredients: place all ingredients into a blender or magic bullet. Blend until smooth, adding the water a little at a time until the dressing is smooth and moving. Store covered in the refrigerator up to a week.

I don’t buy cottage cheese but I have cream cheese, feta cheese and sour cream on hand. Will any of these work?
