PEACHES IN PROSECCO ICE CREAM

You don't need an ice cream maker. This recipe for, dare I say, one of the best homemade recipes, turns out sublime without one—it's easy with a capital E. Think: creamy, smooth, sweet, and studded with peaches kissed with a touch of prosecco. And who doesn't love a boozy ice cream treat? Surprise your friends with a full dish or cone...they'll love the luscious, scoopable texture and bellini-like flavor. ENJOY.

Notes: Prosecco is rosé, but feel free to use another flavor.
PEACHES IN PROSECCO ICE CREAM
Ingredients: 3 cups heavy cream, 8 oz. prosecco, 1 3/4 cups powdered sugar, 2 chopped peaches, peeled, 1 tsp. vanilla extract.
Makes about 4 cups.
1. Prep: Open prosecco and let it sit out to flatten for about an hour. Peel and roughly chop the peaches. Set aside.
2. Make the ice cream base: Whisk the prosecco and powdered sugar in a large bowl until the sugar is dissolved. Whisk in the vanilla. Add the heavy cream and peaches, stir to combine. Using a mixer, beat the mixture on medium-high until it forms soft peaks.
3. Freeze: Remove the ice cream to a freezer-safe container and cover with a lid or plastic wrap. Freeze for 6-8 hours before serving.
*Ice cream maker instructions: Freeze your maker bowl overnight. Add in the combined base ingredients of step 2, above, and process according to your ice cream maker's recommendation, typically 15-20 minutes for soft serve, and longer plus some time in the freezer for hard serve.
