The first time I made beet hummus, I was so in love with the color that I didn't want to eat it, rather scoop it into a pretty glass bowl and display it in my fridge like I'm the type of person who over-organizes her chilled items for beauty's sake. (I'm not.) But then I ate some and couldn't stop--such is my plot in life--I know you'll love it too. Spread it on some favorite toast with avocado slices and boiled egg for a sexy-looking, delicious treat.
And no, you don't eat the daisies... they were for the picture, people.

BEET HUMMUS AVOCADO TOAST
Ingredients: 2 or more favorite bread slices, 1 peeled garlic clove, 1 sliced avocado, 1 sliced boiled egg, beet hummus, sea salt, black pepper, dried or fresh parsley.
Serves 1.
1. Toast up your bread the way you like it. Once done, cut the tip off of the garlic clove and rub the toast's surface with it. Butter, then, if that's the way you like it.
2. Add beet hummus followed by slices of avocado. Finally, place sliced boiled egg and season to taste with sea salt, pepper, and parsley.
