Chocolate for breakfast is always a yes for me. I made a pile of chocolate zucchini muffins a few days ago and had a couple left over needing a re-boot. I think it turned out fab, this trifle is yum.
"If you don't have leftover chocolate muffins, you could use another kind, I think that would be great still. Or brownie crumbles...not as healthy, but hey, we all need to live a little extra right now."
Notes: Yogurt is Greek.
CHOCOLATE ZUCCHINI MUFFIN TRIFLE
Ingredients: Broken-up chocolate muffins- about 2 cups (or any muffin or brownie), 2 cups vanilla yogurt, 1-2 Tbsp. agave nectar, chia seeds, granola. Serves 4.
1. Layer muffin bits in the bottom of glass--1/2 cup or so, and drizzle over some agave nectar.
2. Dollop 1/2 cup of yogurt over, then sprinkle chia seeds and granola on top.
3. Eat and smile.
Tip: No agave? No problem. Use honey. If your trifle base is brownie, omit, because you won't need the extra sweet.
