Oh my goodness, this cocktail.
If you love apple cider like me and wait all year for it to be the freshest, this drink will have you at the first sip. I mean it. I created it because I'm obsessed with cider (and also bourbon, ha!). Spicy apply cider gets turned up a notch (deepened) with a hit of top shelf bourbon and swizzling of thyme simple syrup over ice. The only necessary garnish is a thick slice of honey crisp apple that has been rolled in cinnamon sugar and a thyme sprig. Easy to make, sooo easy to drink.

CINNAMON APPLE BOURBON THYME
Ingredients: Bourbon or whiskey, apple cider, honey crisp apple slices, 2 tbsp. cinnamon-sugar mix, ice. For Thyme Simple Syrup: 1/2 cup water, 1/2 cup sugar, 1/4 cup loosely packed thyme sprigs.
Makes 1.
1. Make the Thyme Simple Syrup: put sugar, water and thyme into a saucepan and heat over medium-high until simmering. Simmer and stir until sugar is dissolved. Remove and cool 30 minutes.
2. Fill lowball glass to 3/4 full with ice. Pour over 1 generous shot of bourbon and 2 shots of apple cider. Add 1 tbsp. Thyme syrup, stirring to dissolve.
3. Dip a slice of apple into cinnamon sugar, plop it into the drink. Add a thyme sprig.
