Dirty Martini Caesar Salad

Oh boy. This one. If you like dirty martinis, you’ll love this salad. Fresh and crunchy, salty and briny with blue cheese crumbles for funky flavor. Big-time deliciousness!

Double or triple to feed more, or add cooked chicken.

Dirty Martini Caesar Salad

Ingredients: 4 cups chopped romaine lettuce, 1/2 cup chopped green olives, 1/2 cup crumbled blue cheese.

For the dressing: 1/4 cup mayonnaise, 1 tsp. minced garlic, 1-2 anchovies, pinch of sea salt, pepper to taste, 1/3 cup grated Parmesan cheese, 1 tsp. lemon zest, juice of 1/2 lemon, 1/2 ounce dry vermouth.

Serves 3-4.

1. Make dressing: whisk all of the ingredients for the dressing in the bottom of a bowl until emulsified. (It helps to smash the anchovies first, I do this with two forks.) Taste for seasoning. If you like a thicker dressing, add a bit more parm and mayo.

2. Finish and toss: Add the romaine, olives, and blue cheese into the bowl. Toss and serve immediately.
