It will fill you up, give you plenty of protein, and satiate your tastebuds with the delicious flavors of nutty chickpeas, red onion, lemon, garlic, creamy avocado, and sweet flaked tuna. Five minutes of prep only, make it ahead and chill until serving or box up for your work lunch. This salad is fresh and meaty, with loads of texture--a pleasure to eat—double or triple the recipe to feed a group.

Notes: Garlic-infused olive oil is Trader Joe's. Ocean-friendly white tuna is Good & Gather.


Ingredients: 1 can white tuna packed in water, 1 large avocado, 1/3 cup thinly sliced red onion, 1 can chickpeas, 2 tbsp. garlic-infused olive oil, juice of 1/2 lemon, 1/2 tsp. sea salt, 1/2 tsp. pepper, 1/2 tsp. dried dill.

Serves 2.

1. Prep: Drain and rinse the chickpeas, chop the avocado, and drain the tuna.

2. Assemble: Tip the chickpeas, avocado, and sliced red onion into a bowl. Using a fork, flake in the tuna. Add the garlic-infused olive oil, lemon juice, sea salt, pepper, and dill over the top. Stir to combine. Serve immediately or chill overnight.
