I love this salad. It's so super chunky (your mouth will not be bored) and the flavor packs serious punch. The recipe makes enough for 1 person as a meal, or 2 as a side, though it is easily doubled or tripled. Low-cal, big flavor, good protein. A win!

Double the recipe for a full meal paired with crusty bread!

Notes: Garlic-infused olive oil is Trader Joe's.


Ingredients: 1 can white tuna, 1 large avocado, 1/2 cup chopped cilantro, 1 sliced shallot, 1/2 cup chopped celery, zest and juice of 1 lemon, 2 tbsp. garlic-infused olive oil, 1/4 tsp sea salt, 1/4 tsp. pepper.

Serves 1-2.

1. Make the dressing first in the bottom of a bowl: whisk together the olive oil, lemon zest, lemon juice, salt and pepper.

2. Add tuna, avocado, celery, cilantro and shallots to the bowl. Toss. Serve immediately.
