LAYERED MATCHA LATTE CHIA PUDDING

This is special, and oh so good. Chia puddings are easy and versatile. Matcha powder (Japanese green tea leaves in powdered form) tastes less grassy and more floral than one would assume, it is also loaded with beneficial antioxidants. I love it here with the chia. The yogurt and strawberries counter the tea flavor just right.



"You can use any milk you like for this! I used vanilla almond milk, but coconut milk would be great too."

Notes: Almond milk is unsweetened. Matcha latte powder is from Trader Joe's.


LAYERED MATCHA LATTE CHIA PUDDING

Ingredients: 2 Tbsp. matcha latte powder (or 2 tsp. plain matcha powder + 2 tsp. powdered milk + 1 tsp. sugar), 3 Tbsp. chia seeds, 1 cup almond milk, 1/2 cup chopped strawberries, 1/2 cup plain yogurt, 1 Tbsp. strawberry Rice Krispies cereal (optional).

Makes 1 large or 2 small servings.


1. Drop the chia seeds into the bottom of a measuring glass. Add the matcha latte powder and the almond milk, whisk well. Refrigerate 5 minutes.

2. Stir the chia mixture and refrigerate for 4 hours or overnight.

3. Layer in the bottom of a serving glass, half of the strawberries, and half of the yogurt. Spoon over half of set matcha pudding. Repeat, holding back a tad of the yogurt and a few strawberries. Top the pudding with a dollop of yogurt, a strawberry or two, and a sprinkle of the matcha powder.
