MARINATED KALE & SWEET POTATO SALAD

I ate this salad for days; I couldn't stop eating it. That tasty. The kale softens into tender tendrils under the simple marinade of garlic-infused olive oil, salt, and pepper. Then it's tossed with soft chunks of sweet potato, tangy blobs of goat cheese, and toasted almonds. You'll give it a snappy finish with drizzles of balsamic vinegar and then eat--silently, I think because the need for words will be absent. Though dancing and air-punching will probably occur.

MARINATED KALE & SWEET POTATO SALAD

Ingredients: 4 cups shredded kale, 1 1/2 tbsp. garlic-infused olive oil, 1/2 tsp. sea salt, 1 tsp. pepper, 2 cups cooked and chopped sweet potato (1 large or 2 small sweet potatoes), 2-3 ounces goat cheese, 1/3 cup shaved almonds, 2 tbsp. balsamic vinegar.


Serves 2.


1. Cook + Massage: Cook the sweet potato, first. You can do this in a few ways--base it on how much time you have. See the options under "TIPS" below. Next, add the shredded kale to a large bowl. Drizzle over the garlic-infused olive oil and add the salt and pepper. Massage the kale with your hands for 2 minutes, then leave it to rest for 15-20 minutes.

2. Toast almonds, assemble salad: While the kale rests, toast the almonds in a dry skillet pan over medium heat until golden brown, about 5 minutes. Watch closely. Remove to cool.

Assemble the salad by adding the sweet potato, goat cheese, and toasted almonds to the kale. Toss. Drizzle over balsamic vinegar before serving.


TIPS

  1. If you have extra time, bake the sweet potato/s on your oven rack at 375*F for about 40 minutes or until just fork tender. When cool enough to handle, peel the skin and chop.

  2. Peel and chop the potato into bite-sized pieces. Roast on a baking sheet at 400* F with a bit of regular olive oil for 20-25 minutes, until fork tender. Cool.

  3. Prick the potato/s with a fork and microwave for 5-6 minutes at 75% power until cooked. (Or your microwave might have a setting for potatoes.) Peel and chop.
