Radish Toast

You can only eat so much avocado toast before it starts to seem too, well, avocado-y. My Radish Toast is a play on the traditional French sandwich of baguette/butter/radish/salt, but with a dose of tangy goat’s cheese, snipped earthy chives, and the piece de la resistance, a hot honey drizzle on top. Be creative with bread choice and don’t skimp on the pre-buttering before you toast it up. But use salted butter because it’s better that way and be prepared to crave it again soon. Very soon.

Radish Toast

Ingredients: 2 slices bread of choice, salted butter, 2-4 tbsp. goat’s cheese, 1/2 cup thinly sliced radish (about 3 large), flaky sea salt, chives, hot honey.

Makes 2.

1. Prep and toast bread: wash, then slice the radish thinly. Set aside. Spread room temperature salted butter over the bread. Toast to desired doneness.

2. Make sauce: Spread the toast with goat cheese to your liking. (It helps if the cheese has sat out for 15 minutes or so to make spreading easier. ) Top with sliced radish. Add sea salt to taste and chopped chives + a drizzle of hot honey. Eat immediately.
