SPINACH-GRITS W/ FRIED EGG

Some people turn their noses up at grits, but that is silly. Grits are a terrific staple to have on hand and are so versatile. Indeed, you can only eat so many oats.



"Such a great meal for breakfast or lunch. Instead of spinach try chopped kale or chard, that would be yum too."

Notes: Spinach is baby spinach, chopped.


SPINACH-GRITS W/ FRIED EGG

Ingredients: Cooked grits, chopped baby spinach, 1 egg, grape tomatoes, Everything Bagel Seasoning


1. Cook grits according to package instructions.

2. Meanwhile, fry an egg the way you like it.

3. When the grits are done, drop in a handful of spinach and stir to wilt slightly. Tip into a bowl and lay the egg on top.

4. Slice a few grape or cherry tomatoes and scatter over the egg, then follow with Everything Bagel seasoning.


Tip: Grits cook best in salted water. For creamier grits, stir in a nub of butter or coconut oil.
