I have a minor obsession with oats, namely oat bowls. It started as a child with my Mema. She would always make me oatmeal with brown sugar and salt and a swirl of milk, then click on Mr. Rogers and let me sit on the little stool, warm bowl in my lap. So, you could say My feelings of well-being from oats run deep. But with good reason, because they fill you up and have nutritional benefits that we can all use more of.
"Always add a healthy pinch of salt during the cooking, rather than after."
Notes: Oats are Quaker old-fashioned oats.
BLUEBERRY & ALMOND OAT BOWL WITH COCONUT
Ingredients: 1 cup cooked oats, 1/3 cup blueberries, 1/4 cup slivered almonds, 1/4 cup shredded coconut, 1 tsp. honey, 1 tsp. chia seeds
1. Prepare oats according to package directions, place in bowl.
2. Drizzle oats with honey.
3. "Stripe" the top of the oats with blueberries, almonds, and coconut. Sprinkle over the chia seeds.
Tip: I use sweetened coconut, but unsweetened natural coconut is nice as well, if you prefer that, up the honey drizzle amount a little.
