STRAWBERRY, GREENS & FETA CHOPPED SALAD AVOCADO TOAST

It tastes like joy. I'm not kidding. The chopped salad is a delicious blend of baby greens, basil, strawberries, and Feta tossed in a lemon Dijon vinaigrette. Then, it's piled on your favorite toast, which has been blanketed thickly with mashed avocado. You absolutely can't be sad after eating it.

Notes: Dijon mustard is Grey Poupon.
STRAWBERRY, GREENS & FETA CHOPPED SALAD AVOCADO TOAST
Ingredients: 2 cups mixed baby greens, 1 handful (about 1/2 cup) of basil or parsley, 1 cup of strawberries, 1/4 of an English cucumber, 1-2 oz. crumbled Feta cheese, cracked pepper (optional) 1 avocado, 2 large slices of bread.
For the Lemon Dijon Vinaigrette: 2 tbsp. olive oil, 1 tbsp. lemon juice, 1 tbsp. honey, 2 tsp. Dijon mustard and a pinch of sea salt.
Makes 2 pieces of avocado toast (plus some salad leftover).
1. Make vinaigrette: In the bottom of a large bowl, whisk together the oil, lemon juice, honey, Dijon mustard, and salt.
2. Make salad: Chop the baby greens, basil, strawberries, and cucumber roughly into the same size. Add them to the bowl with the Feta and cracked pepper, if you like. Toss.
3. Assemble: Toast two slices of bread. Open the avocado and remove the stone. Mash it with a bit of salt, if you like, then split the mash between both slices. Add the chopped salad on top and serve immediately.
