DIPPED VANILLA GINGER SANDWICH COOKIES

I'm in love with these fast yet fancy-looking cookies; they are the best to make for a last-minute gift, or take-along dessert, whether you make them for the holidays or not. (I could also see them packaged up for bridal or baby showers!) Four ingredients are all you need, and twenty minutes, not including set-up time. Yum--very yum.



Notes:


DIPPED VANILLA GINGER SANDWICH COOKIES

Ingredients: 3-4 blocks of almond bark (1 cup melted), 2 bashed graham crackers, 1/2 cup chopped candied ginger, 24 vanilla sandwich cookies.

Makes two dozen.


1. Melt the almond bark in the microwave on half power in 30-second increments until just melted. 2. Dip one side of a cookie into the almond bark. Immediately sprinkle with graham cracker crumbs and add a bit of chopped ginger, pressing it down to adhere. 3. Allow cookies to set at room temperature for 1 hour.
