FRUIT SALSA FRESCA +
CINNAMON-SUGAR PITA CHIPS
Ingredients: 2 cups chopped strawberries, 1 chopped kiwi, 1 peeled and chopped Honey Crisp apple, 1 tbsp. chopped mint, juice of 1 lime, 1 tsp. sugar. For the Cinnamon-Sugar Pita Chips: 4 pieces pita bread, 1/4 cup sugar, 2 tbsp. ground cinnamon, 1 tbsp. neutral oil.
Serves 2-4.
1. Preheat oven to 400* F and line 2 baking sheets with parchment paper.
2. Stir together strawberries, kiwi and apple. Add chopped mint, lime juice and sugar. Stir to combine, set aside.
3. Lightly brush both side of the pita bread with neutral oil. Cut into 8 wedges each, for a total of 32 chips.
4. Stir together sugar and cinnamon. Sprinkle on both sides of pita wedges. Bake chips for 7 minutes, flip over, then bake another 7 minutes. Pita will crisp as it cools. May be stored, covered for up to a week.
