FRUITY FLATBREAD

I had the memory of a particular picnic when is was ten years old and eating my first piece of "fruit pizza". The base was pressed tube cookie dough, with buttercream frosting and sliced strawberries on top, sprinkled with more sugar. A sugar overload, to be sure.


I knew this was a recipe that could use a reboot- made with more fruit, a healthier base, and less sugar. Holla! It still feels like dessert. This Fruity Flatbread is no-fuss, you can make it less than ten minutes. It bursts with refreshing fruit flavor and creaminess, is pleasantly chewy, (satisfying) but is sans the glycemic roller coaster afterward. Phew.

Notes: Frozen flatbreads are Trader Joe's. Cream cheese is Philadelphia.


FRUITY FLATBREAD

Ingredients: 6 oz. softened cream cheese, 1/4 cup powdered sugar, 1/2 tsp. cinnamon, 2 frozen flatbreads, 1/2 cup raspberries, 2 cups sliced fruits: bananas, peaches, strawberries, grapes, zest of 1 lime.

Makes 2


1. Preheat the oven to 400*, lay the frozen flatbread on a baking sheet. Bake for 5 minutes, remove to cool.

2. Stir the powdered sugar and cinnamon into the cream cheese. Spread over each flatbread.

3. Layer the fruit by type down the flatbread. Zest the lime over the top. Serve immediately.


Tip: You can use lemon zest in place of lime also!
