This recipe is for those of us who want big flavor, but also fast and easy.
I used large shrimp for this recipe, but looking back, wished they would have been jumbos. Get what makes sense for you. The succulent savory-sour flavor is so delicious--that tongue-tingling ring that makes your salivary glands wake up! I make fluffy rice and a green salad to go with, but also love the shrimp folded into corn tortillas with shredded cabbage and scoops of fire-y hot salsa and sour cream.

GARLIC & CHILI-LIME SHRIMP SKEWERS
Ingredients: 1/4 cup Sriracha, 2 minced garlic cloves, 1 tsp. white vinegar, 1 tsp. sugar, zest of one lime, 1 pound shrimp, 1 tbsp. chopped cilantro.
Serves 2-3.
1. Stir the first five ingredients together to make a marinade. Coat the shrimp well and refrigerate for 1 hour.
2. Soak skewers (if using wood rather than steel) in warm water while the shrimp marinates.
3. Skewer the shrimp and grill over medium heat until no longer translucent, flipping over after about 4 minutes.
4. Before serving, scatter over fresh cilantro.
