HEALTHIER PEACHES & CREAM

When peach season hits, I'm a complete sucker. Daydreams begin in earnest for peach crisp, peach pie, peach-baked oatmeal, and sliced peaches on granola. However, one of my all-time faves is peaches & cream. Hot peaches, sprinkled with brown sugar and dotted with butter, then roasted and covered in heavy whipping cream.


This healthier version cuts the fat way down, and uses coconut sugar which has a lower glycemic index. It tastes so right, peachy and luscious, just as it should.

HEALTHIER PEACHES & CREAM

Ingredients: 1 large peach per person or 2 small, 2 tsp. coconut sugar, 1/2 tsp. ground cinnamon, 1/2 cup vanilla Kefir, 2 Tbsp. shaved almonds.

Serves 2


1. Preheat the oven to 400* and line a baking sheet with parchment paper.

2. Slice the peaches and remove the stone. Place on baking sheet and sprinkle over 1 tsp. of coconut sugar for each, follow with a dusting of cinnamon. Roast for 15 minutes.

3. Remove the hot peaches to plates or bowls. Pour over the Kefir, and scatter with shaved almonds.


Tip: For a toasty flavor-bump, warm the almonds in a dry pan on medium heat until browned.
