PEANUT-LIME PAN NOODLES

Leftover pasta doesn't have to be boring anymore. You can whip up these peanut noodles, then scarf them down in a flurry of pride over how easy they were to make, and how delicious to eat.

Notes: Noodles are standard linguini.
PEANUT-LIME PAN NOODLES
Ingredients: 2 Tbsp. olive oil, 1 tsp. minced garlic, 1 Tbsp. peanut butter, 2 tsp. soy sauce, 1 tsp. rice vinegar, 1/4 tsp. sesame oil, 1 1/2 tsp. honey, zest of 1/2 lime, 2 cups leftover cooked long noodles, sesame seeds, chili flakes.
Serves 1-2
1. Heat olive oil, garlic, peanut butter, soy sauce, rice vinegar, sesame oil, honey and most of the lime zest over medium heat, in a pan. Whisk the ingredients until they come together as a smooth sauce.
2. Tumble in the leftover noodles, stir to coat in the sauce.
3. Remove noodles to a plate, and sprinkle over extra lime zest, chili flakes, and sesame seeds to taste.
Tip: Warm the noodles in the microwave with a teaspoon of water for 30 seconds, they will mix into the sauce easier if they are not cold and stiff.
