There really is a level of sandwich that can be called perfect. This guy is it. Not much to say other than if you make this for someone, they might fall in love with you.
"I bake an overnight bread (boule) that I call Moon Bread because it looks like the face of the moon, beautiful craters. I worked some sharp cheddar into it before baking and found that it is the best bread for my sandwiches--like this one. Highly recommend."
Notes: Chicken is leftover-precooked and sliced.
PERFECT BCLT WITH HERBY MAYO
Ingredients: Rustic bread, cooked bacon, lettuce, sliced tomato, chicken, herby mayo, sea salt, pepper. Serves as many you want to make.
1. Toast the bread. Make the Herby Mayo: mix 2 Tbsp. mayo with 1 Tsp. each of chopped cilantro, parsley and dill + a healthy pinch of salt. (squeeze of lemon optional.)
2. Smear the mayo on both slices of toasted bread, layer it up: lettuce, bacon, chicken, tomato, pepper.
Tip: Sourdough bread would be superb. I think pumpernickel would be good as well.
