Although I've been using this recipe for a while, it has never made it to my site. This is, without a doubt, the best recipe for overnight oats while still being tasty and low in sugar if that's something you like to watch. For me, it's all about the taste and ease of making.

Feel free to substitute any fruit you can think of for your "pie oats." YUM>

Recipe is easily vegan my using vegan nut milk and vegan yogurt.



Ingredients: 1 cup rolled oats, 1 1/3 cups nut milk, 2 tbsp. pure maple syrup, 2 tbsp. chia seeds, 1 tsp. cinnamon, a pinch (or two) of sea salt, a dribble of vanilla extract, and 1/2 cup of raspberries. For serving (optional): Dollop of yogurt, maple syrup, and more berries.

Makes 2.

1. Before bed, gently stir together all ingredients in a bowl. Split the mixture between 2 glasses or jars. Cover and refrigerate overnight.

2. Before eating, top with: A dollop of yogurt, a drizzle of maple syrup, and a few more berries if you like.
