Fun fact: cocktails with excess sugar raise your body temperature.
That's not what we are going for in the summer, (or for us over-forties--e v e r). This cocktail is not sweet. Of course, you could up the sweetness a little to taste, but the tart and fruity flavor is part of what makes it quenching.
To keep it vegan, use agave nectar. If that isn't an issue for you, honey also works.
This drink is delicious with basil subbed in for the mint.
Notes: Vodka is Grey Goose.
STRAWBERRY-MINT ICED VODKA
Ingredients: 2 strawberries, 5-6 mint leaves, 2 shots of vodka, juice of 1 lime, 1-2 tsp. agave nectar.
Chop strawberries and muddle them in the bottom of a shallow glass. Snip in the mint leaves.
To a cocktail shaker add vodka, lime juice, agave nectar, and ice. Shake it up.
Add ice to the glass and pour over the contents of the shaker. Stir.
Garnish with a mint sprig, if you like.
