HEATH BAR LAYER COOKIES
Ingredients: 2 cups all purpose flour, 1 cup softened butter, pinch of salt, generous 1/2 cup powdered sugar, 2 cups chocolate chips, 1 tsp. coconut oil, 3/4 cup toffee bits (or 3 chopped heath bars), coarse salt (optional).
Makes one 9x13 dish.
1. Preheat oven to 325*, line an 9x13 inch baking dish with parchment paper.
2. Whisk flour, sugar and salt together. Add softened butter and mix until crumbly. Press into the bottom of the baking dish, then prick a few times with fork. Bake for 20-25 minutes until just set and beginning to color on edges. Remove to cool.
3. Heat chocolate chips and coconut oil in a microwave safe bowl in 30-second increments at half-power until just starting to melt. Remove and let residual heat melt the rest of the way. Pour chocolate over shortbread, spread to the edges evenly.
4. Sprinkle over toffee bits. Refrigerate 1 hour or until firm.
