After yoga this morning, all I wanted was something cold and cleansing. I remembered my frozen watermelon...the pink frosty cubes were practically begging to be blended into a refreshing blush-colored slurry. Too, I was desiring tropical flavors like pineapple and coconut...(fifteen years ago we went to Maui and loved it). This bowl is the result of a heat-full yoga session and the memory of five days on a Hawaiian island. It is delightful.

Notes: Coconut is unsweetened.


Ingredients: 1 cup frozen watermelon, 1/2 cup + 2 Tbsp. fresh chopped pineapple, 1/4 cup vanilla yogurt, 1 Tbsp. shredded coconut, 1 tsp. chia seeds,

Makes 1 large bowl

1. Place a bowl in the freezer. Process or blend the watermelon, yogurt, and 1/2 cup of pineapple. Mixture should be thick and smooth.

2. Pour the melon mixture into the chilled bowl. Decorate with more pineapple, coconut, and chia seeds.

Tip: If you prefer a smoothie, blend everything together with 1/2 cup of coconut milk. Omit the extra pineapple.
