Time to make mornings (or any time of day) a little easier with a dose of yummy protein by way of egg bites. Why grab them at the drive-through when you can make a huge batch yourself? They are so easy, and so yummy.

"Any mix-ins at all, suit yourself!"

Notes: You can also use egg white!


Ingredients: 12 eggs, 2 tbsp. fresh parsley- chopped, 2 oz. pimentos, 3 green onions-chopped, 1/3 cup shredded Parmesan cheese, salt and pepper to taste.

Makes 12.

1. Preheat oven to 350*, spray the muffin tin well with cooking spray.

2. Pour egg into each cup to 3/4 full. Add toppings to each. Bake for 20-25 minutes until completely set and slightly colored around the edges. Remove to cool.

3. Refrigerate up to 4 days covered, or freeze up to a month. To cook from frozen, thaw for 10 minutes, then run in the microwave for 15 seconds.
