Looking for a new grilled cheese or just tired of the same-old? This. do this. Extra points for using tomatoes and/or basil from your own garden.

Notes: Mayo is Hellmann's, butter is unsalted
TOMATO, BASIL & MOZZARELLA GRILLED CHEESE
Ingredients: 2 slices sour dough bread, 2 Tbsp. butter, 1 Tbsp. mayo, 1 cup shredded mozzarella cheese, 1 tomato-seeded and sliced, 1/3 cup fresh basil leaves, salt and pepper, 1 tsp. dried oregano
1. Heat a non-stick skillet or griddle over medium-high heat.
2. Meanwhile build the sandwich: spread mayo on all sides then layer cheese, tomato, basil, cheese. Salt and pepper to taste. Top with remaining slice.
3. Melt half the butter in the skillet, then fry the sandwich on one side until browned and crusty. Flip over. Slip the remaining butter underneath the sandwich and continue until done.
